Step 1: Set Up Your Workspace
Place the magnetic angle block flat on your kitchen counter or a stable, non-slip surface.
Decide which angle your knife needs: use the 15° side for Japanese-style blades, slicing knives and fine-edge kitchen knives, or the 20° side for heavier Western chef's knives and utility knives.
Step 2: Mount the Knife
Take your knife and rest the spine flat against the table or counter to keep it stable.
Bring the side of the blade flat against the magnetic face of your chosen angle block (15° or 20°). The strong magnet will snap the blade securely into place at the correct angle, with the sharp cutting edge pointing upward.
Step 3: Attach the Coarse Disk
Take the rolling cylinder and screw the 400-grit diamond-coated disk onto it.
This coarse grit is designed to quickly reshape dull edges or fix minor nicks, so you only need this step if your knife is very dull. If your knife is already fairly sharp and just needs maintenance, you can skip straight to the fine grit.
Step 4: Run the Coarse Sharpening Passes
Place the rolling cylinder flat on the counter right next to the magnetic block, with the disk touching the edge of the blade.
Roll the cylinder back and forth along the length of the blade, applying light, steady pressure. You will feel and hear the diamond coating biting into the steel.
Continue rolling smoothly along the entire edge for about 30 to 45 seconds, until you feel a small burr form on the opposite side.
Wipe the blade down with a damp cloth or paper towel to remove any metal dust and coarse grit particles.
Step 5: Switch to the Fine Disk
Unscrew the 400-grit coarse disk from the cylinder.
Screw on the 1000 or 1200-grit fine disk for polishing and honing the edge.
Step 6: Polish and Finish
Place the rolling cylinder back against the knife, still held securely by the magnetic block.
Roll the cylinder smoothly back and forth along the blade just as before, using light pressure for another 20 to 30 seconds. This refines the scratch pattern from the coarse disk and creates a razor-sharp, polished edge.
Carefully unmount your knife from the magnetic block, wipe it clean one final time, and test the edge.
